A rare meeting between the art of Japanese sake and the excellence of Lavaux
We have the immense honor of welcoming in person Miho Imada, exceptional master brewer (tōji) of the Fukucho house (Hiroshima), recognized among the 100 most influential women in the world by the BBC – an exceptional presence in the heart of Cully.

On the agenda, A journey in three parts:

  • Introduction to Sake with Morimi Kabayashi, guest professor in sake and Japanese tea at the University of Gastronomic Sciences (UNISG) in Italy
  • Presentation of Fukucho sakes by Miho Imada, followed by a tasting of each cuvée and its gourmet bite created by the Chef of the Auberge du Raisin
  • Final sharing around the five pairings, to experience a suspended moment between Japan and the Romandy terroir

Tasting of 5 exceptional sakes, each paired with a bite crafted by the Chef

  • feral rillette with sérac and lime
  • perch ceviche with coconut milk and yuzu
  • Malakoff with aged Gruyère AOP, shallot in port
  • AOP rye bread, fresh sheep cheese from Moleson and green apple
  •  Trout gravlax with elderflower, confit fennel

(The menu presented below is still under development and may evolve to achieve the best food-sake pairing possible)

cancellation policy

As spots are limited, your registration is confirmed upon receipt of payment.

However, we know that life sometimes has unexpected events. If, for a reason of force majeure, you need to cancel your participation, we invite you to contact us as soon as possible to find the most suitable solution together.

For any cancellation made at least 3 weeks before the workshop, the amount paid will be fully refunded. In case of a later cancellation, your registration may be deferred to a future edition, depending on available spots. You also have the option to transfer your spot to another person, upon simple request.

If the workshop is canceled by Maison Morimi, the full amount paid will be refunded to you.
