1st cup: 90ml at 70°c – 1 min
2nd cup: 90 ml at 80 °c – serve immediately
3rd cup: 90 ml at 90 °c – serve immediately

cold infusion (mizudashi)
1g of genmai matcha for 100ml of still or sparkling water, let infuse in the fridge, for a rich profile leave for 24h or more, for a bright profile stop at 8-12h, gently shake before serving.

▪ tips: use still water for a deeper vegetal sweetness, sparkling water for a bright and toasted profile, carried by fine bubbles. the Japanese brand hario makes cold brew tea bottles with an integrated filter, specially designed for cold infusions.

iced flash brew
3g genmai matcha, 100ml water at 70°c, whisk for 10-15 sec. to properly dissolve the matcha, filter the tea into a clean container, then pour into a glass filled with 150g of ice, wait 10 sec., serve. 

▪ tips : waiting 10 seconds before serving stabilizes the tea, stops the infusion, and allows for a cold, clear, and bright drink, without over-dilution.

unlike classic bags of 1.5g to 2g, we offer individual bags of 3g, allowing for at least 3 successive infusions. in total, 30 cups for a pack of 10 bags, this without loss of quality. a premium format ideal for travel, the office, or at home.

hot infusion, for each tea bag
1st cup: 90ml at 70°c – 1 min

cold infusion (mizudashi)                                 
two bags of genmai matcha, use 400 ml of water, let infuse in the refrigerator for 24h or more to obtain a rich, dense profile. to favor a bright, clear profile, use 500 ml of water and stop the infusion between 8 and 12h. in both cases, gently shake before serving.

The Kirishima region, in Kagoshima Prefecture, has long been recognized as one of the great terroirs of Japanese tea.

Kirishima teas are born at the foot of the sacred mountains of Japanese mythology. Between volcanic lands, morning mists, and pure waters, the tea gardens of Kirishima give rise to teas of remarkable finesse and great aromatic depth.

The producer from whom we source directly and whom we visit regularly pays particular attention to the quality of each production. Each batch is systematically tasted and validated by the manager of the operation himself, ensuring consistency and uncompromising standards.
